Recipe: Quick Sourdough Waffles
My waffle recipe does not use "discard" sourdough as some call it. I opt to use the same levain build that I use as if I was about to mix a loaf of bread. This means you don't need any additional leavening agents like baking powder or baking soda. All you have to do is build your levain, mix everything together and make your waffles.

What You Need (for Levain Build)
100 grams sourdough starter
150 grams all purpose flour
50 grams whole wheat flour
150 grams water
Mix together and let sit in a warm spot for 4 hours. You can now put it in the fridge for later use, or use immediately. It should roughly double in size.
What You Need (for final mix)
380 grams levain
380 grams coconut milk
50 grams all purpose flour
50 grams sugar
50 grams butter
50 grams chopped dark chocolate
50 grams toasted coconut flakes
6 grams salt
1 tsp. cinnamon
1 tsp. nutmeg
What You Need To Do:
Combine the levain, coconut milk, sugar, and butter into a bowl. Whisk together until all incorporated.
Add the extra 50 grams of flour, the salt, cinnamon, and nutmeg. Let the mixture rest for 15 minutes.
Toast your coconut flakes in the oven until dark brown. Fold these, along with the chopped dark chocolate chunks, into the batter. Don't over mix.
Heat up your waffle iron. Pour the batter in and cook about 10 minutes total.
